The liquid sap after partial freezing is sweeter because of freezed distillation.  Can anyone describe to me or refer me to a site that describes the chemical process of freeze distillation?

Someone recently applied for a patent on using freeze concentration/distillation in order to concentrate sap for making maple syrup. The patent application contains a lot of useful background information on the process
